Buy your favourite Cookd Recipes in a box! 👉 🤍 Chicken Mandi Recipe: Mandi Masala: Cinnamon - 1 stick Green Cardamom - 5 nos Cloves - 8 nos Mace - 1 no Star anise - 1 no Cumin Seeds - 2 tsp Coriander Seeds - 2 tbsp Black peppercorns - 1 tbsp Nutmeg - ¼ no Saffron Water: Saffron Strands - 1 pinch Hot Water - 3 tbsp Chicken Marination: Mandi Masala - 1 tbsp Kashmiri Chilli Powder - 1 tbsp Ginger Garlic Paste - 1 tbsp Chaat Masala - ¼ tsp Oil - 2 tbsp Lemon juice - 1 no Saffron Water - 3 tbsp Salt - 2 tsp Mandi Rice: Oil - 3 tbsp Ghee - 1 tbsp Cinnamon - 1 stick Bay Leaf - 1 no Onion (thinly sliced) - 3 nos Green Chilli (slit) - 3 nos Ginger Garlic Paste - 1 tbsp Red Chilli Powder - 1 tsp Turmeric Powder - ¼ tsp Mandi Masala - 2 tbsp Water - 1.75 litres (7 cups) Rice (soaked) - 750g Lemon Juice - ½ no Salt - 2 tsp To smoke: Charcoal - 1 piece Ghee - 1 tbsp To Garnish: Fried Onion - 2 tbsp Fried Cashews (split) - 10 nos Fried Almonds - 10 nos Fried Raisins - 10 nos Coriander Leaves (finely Chopped) - 2 tbsp Instructions: 1. Prepare the mandi Masala by dry roasting the mentioned ingredients till it turns aromatic and let it cool down 2. Blend the dry roasted spices to a fine powder and keep it aside 3. Prepare saffron water by soaking a pinch of saffron strands in 3 tbsp of hot water to absorb colour 4. Wash and soak the rice for 20 minutes 5. Prepare the marinade for the chicken by mixing kashmiri chilli powder, 2 tbsp of the mandi masala, ginger garlic paste, chaat masala, oil, lemon juice, salt and 3 tbsp of the saffron water 6. Mix till all ingredients combine into a thick paste. 7. Score the chicken legs 8. Apply the marinade on the chicken legs and rub it in gently 9. Let the chicken marinate for 30 minutes. 10. Heat a kadai with oil for shallow frying 11. Deep fry the marinated chicken on a medium flame for 6 minutes on each side. Keep it aside 12. To make the mandi rice, Heat a deep pot, add oil and ghee 13. Add cinnamon, bay leaves and let it crackle 14. Add the sliced onions and green chillies. Saute till the onions turn golden brown 15. Add ginger garlic paste and mix for a few seconds 16. Add chilli powder, turmeric powder and the mandi masala and mix for a minute. 17. Add 1.75L of water and mix well. 18. Add salt and lemon juice. Bring the water to a boil. 19. Add the soaked and strained rice and keep stirring gently to avoid letting it stick to the bottom 20. Cook it till the rice and water are level . 21. Cover the pot and seal it tightly. 22. Place the pot on a preheated tawa for 10 minutes on a low flame. (if the tawa isn’t preheated, keep the flame on high for 5 minutes and then on low for 5 minutes) 23. After 10 minutes, turn off the flame and let it rest for 10 minutes. 24. Open the pot, create small gaps using a thin stick. Place the chicken on top of the rice leaving some space in the middle. 25. Place a bowl with a piece of hot charcoal in the middle. Pour some ghee over it and seal the pot immediately. 26. Let it smoke for 5 minutes. 27. Open the pot, take out the chicken separately, fluff up the rice. 28. Serve the rice on a big plate, garnish it with fried nuts and raisins, fried onion and chopped coriander. 29. Place the chicken legs on top and serve it hot. Mutton Mandi Recipe in English: Ingredients: -Mutton shoulder 1 kg (approx.) -Meat tenderizer 1 tbs or as required Mandi Spice Mix: -Sabut kali mirch (Black peppercorns) 2 tsp -Jaifil (Nutmeg) ½ -Javatri (Mace) 1 whole -Sonth (Dried ginger powder) 1 tsp -Hari elaichi (Green cardamom) 2 tsp -Laung (Cloves) 2 tbs -Oil ½ Cup -Pyaz (Onion) chopped 1 medium -Hari elaichi (Green cardamom) 5-6 -Laung (Cloves) 5-6 -Hari mirch (Green chilies) 4 -Pani (Water) 1 & ½ liters or as required -Namak (Salt) ½ tbs or to taste -Makhan (Butter) melted 2 tbs -Prepared mandi spice mix 1 tbs -Zarda ka rang (Yellow food color) 1 pinch or as required Mandi Rice: -Oil ¼ Cup -Pyaz (Onion) chopped 1 medium -Tez paat (Bay leaf) 1 -Hari elaichi (Green cardamom) 5-6 -Laung (Cloves) 5-6 -Gajar (Carrot) chopped ½ Cup -Shimla mirch (Capsicum) chopped ½ Cup -Chawal (Rice) sella 2 Cups (soaked 1 hour) -Yakhni (Stock) 3 Cups -Namak (Salt) 1 tsp or to taste -Koyla (Charcoal) for smoke Directions: -Wash and pat dry mutton shoulder. -On mutton leg,add meat tenderizer and apply evenly,prick both sides with fork and marinate for 1 hour. For Mandi Spice Mix: -In spice mixer,add black peppercorns,nutmeg,mace,dried ginger powder,green cardamom,cloves and grind to make a coarse powder & set aside. -In pot,add oil and onion,fry until translucent. -Add green cardamom,cloves,green chilies and mix well. -Add marinated mutton shoulder,water and salt,mix well and bring it to boil,cover & cook on low flame until done (approx.2 hours). -In separate bowl,add butter,prepared mandi spice mix,yellow food color,mix well and set aside. -On baking tray,place cooked mutton shoulder and remaining cooked marinade. -With the help of the brush,spread spiced butter on both sides and grill in preheated oven until golden brown color appears. For Mandi Rice: -In pot,add oil,onion and fry until translucent. -Add bay leaf,green cardamom,cloves and mix well. -Add carrot,capsicum and mix well. -Add rice,stock and salt,mix well and bring it to boil,cover and cook until done. -On serving plate,add cooked rice and mutton mandi,give a coal smoke for 2 minutes & serve. For Mandi Spice Mix: -Spice mixer mein sabut kali mirch,jaifil,javatri,sonth,hari elaichi aur laung dal ker ache tarhan grind ker ka coarse powder tayyar ker lein & side per rakh dein. -Pot mein oil aur pyaz dal dein aur translucent hunay tak fry ker lein. -Hari eliachi,laung aur hari mirch dal ker ache tarhan mix ker lein. -Marinated mutton shoulder,pani aur namak dal ker ache tarhan mix karein aur ubal anay ka bad dhak dein aur halki ancch per ghost gul janay tak paka lein (approx.2 hours). -Alag bowl mein makhan,prepared mandi spice mix aur zarda ka rang dal ker ache tarhan mix karein & side per rakh dein. -Baking tray per cooked mutton shoulder aur bacha huwa cooked marinade bhi dal dein. -Brush ki madad sa tayyar spiced butter ko dono sides per laga lein aur preheated oven mein golden brown color anay tak grill ker lein. Mandi is a traditional dish originated from Yemen and later became popular in Arab countries. It is a delicious combination of meat, rice and spices. It can be prepared using meats such as chicken, lamb, camel, beef etc. In this Mandi recipe, for the authentic taste we use Sella Basmati Rice. Mandi Description ARABIC MANDI | Mutton Mandi Recipe | Chicken Mandi Recipe | How to make Arabic Mandi at home Prep time: 10 minutes Cook Time: 3-4 hours Servings: 6-8 people Cuisine: Yemeni, Arabic Course: Main Course Author: Khizran Ahmed INGREDIENTS FOR MUTTON YAKHNI Mutton - Leg and Shoulder mix, around 2 kilograms, cut into big pieces Onion- 1 big , sliced Garlic- 1 full bulb, peeled Ginger- 1-2 inch piece Black pepper- 8-10 Cloves- 8-10 Black cardamom- 1 Green cardamom- 6-7 Cinnamon stick- 1 Oil- 1/4 cup Salt - 5 Teaspoon (for rice) + 2 Teaspoon (for meat) Water- 3 Liters or as required FOR RICE: Sella basmati rice (soak for 2 hours) or Regular basmati rice (soak for 30 minutes)- 1 Kilogram (5 cups) Onion- 1 medium sized, sliced Black pepper- 8-10 Cloves- 8-10 Black cardamom- 2 Green cardamom- 7-8 Bay leaves- 2-3 Dry Lemon (Black)- 2 Oil- 1/4 cup METHOD: 1-Heat oil in a big pot and add whole spices (sabit garam masala) and onion. 2-When the onion turns a light brown color, add Mutton and sauté on high flame until the meat changes its color. 3-Add 2-3 liters of water, whole garlic, ginger and salt. 4-Let it boil, remove the scum and cook on low flame for 4-5 hours until it’s tender (add more water during cooking if required, we need 10 cups of broth at the end). 5-Now strain the broth, remove the meat and keep aside. 6-Heat a little bit of oil in a big skillet or frying pan, add mutton pieces and cook on high flame for a few minutes until you get nice golden color on both sides. Remove and keep aside. 7-For rice, heat oil in a big pot , add whole spices (sabit garam masala) and sliced onion. 8-When the onion turns a light brown color, add broth, cover and bring it to a boil. 9-Strain soaked rice. 10-When the broth starts boiling, remove the lid, and add bay leaves, dry lemons and rice, mix well and cook on high flame until the water completely dries out. (Do not cover the pot, do not stir rice again and again). 11-Now cover the pot with lid and keep on low flame (dam) for 5 minutes. 12-Mix the rice gently after 5 minutes, place the mutton over the rice and keep on low flame (dam) once again for 10-15 minutes. 13-Delicious mandi is ready, Dish out and serve hot with tomato sauce, yoghurt sauce, green chili paste, onions and green chillies. (Kindly check the Sauces recipes below) TOMATO SAUCE : Ingredients: Tomatoes- 3 Large size or 2 cups Garlic- 1 Tablespoon or 4-5 cloves Green Chillies- 4 or according to your taste Fresh coriander- 1/4 cup Salt- 1 1/2 Teaspoon or according to your taste Method: 1- Take a grinder, add all the ingredients. 2- Grind on pulse mode to get a coarsely ground texture. 3- Remove from the grinder and mix in salt. GREEN CHILLIES PASTE Ingredients: Spicy Green Chillies- 20-25 or as desired Water- 2 Tablespoons or as required Method: Add green chillies and water into a blender and make a paste. YOGHURT SAUCE (RAITA) Ingredients: Yogurt- 1 cup Fresh coriander- 1/2 cup Mint leaves- 1/4 cup Green chillies- 2 Garlic- 2 cloves Water- 1-2 Tablespoons Roasted cumin powder- 1/2 Teaspoon Salt- 1 Teaspoon or according to your taste Method: 1- Put fresh coriander, mint leaves, garlic and green chilies in a grinder, add some water and make a paste. 2-Beat the yogurt. 3-Add the paste, salt and roasted cumin powder in yogurt and mix well. NOTES: - We need total 10 cups of broth for 5 cup rice so if you have broth more than 10 cups, cook more until it becomes 10 cups because we already added the salt for rice in broth wo need exactly 10 cups broth. - If you have broth less than 10 cups broth for example 8 or 9 cups, add 1 or 2 cups water to make it 10 cups. - You can use yellow dry lemons as well. Grind all these ingredients well until you get a fine powder. Your masala is ready set aside. Directions for marination: In a bowl mix lemon juice, ginger garlic paste, green chili paste, mandi masala and mix well. Take mutton leg and place deep cuts on it. Sprinkle salt all over leg properly. Then drizzle prepared mixture on leg, wrap it in aluminum foil and marinate it for 6 to 8 hours or overnight in refrigerator. Directions for boiling leg: Take a big pot heat oil and sauté onion in it until translucent for 2 to 3 minutes. Place marinated mutton leg in it and cook both sides for 4 to 5 minutes. Then add water, salt and bring it to boil on medium low flame. When water starts boiling, cover the lid and let it boil for 1 hour at least or until it’s tender on medium high flame. Take out the leg and separate the stock for later use. Directions for baking: In a bowl mix butter and mandi masla until well combined. Brush this mixture on boiled mutton leg properly. Preheat your oven and bake mutton leg at 180 degrees for 20 to 25 minutes until brown. Directions for rice: Heat oil in a pan, sauté cumin seeds, bay leaves, star anise and green cardamom in it for 1 to 2 minutes. Then add green chili paste, black pepper, salt and cook for 2 to 3 minutes. In a bowl add rice and soak them for 20 to 25 minutes. Add leftover stock and bring it to boil. Then add socked rice and let it cook until water dries 80%. Add almonds, raisins, baked mutton leg and steam it for 10 to 12 minutes. When cooked, heat a coal and smoke your dish for another 5 minutes. Preparation time: 2 hours Cooking time: 2 hours Serving: 5-6

For Cook Mandi Rice Heat ghee 1/2 cup Cinnamon sticks 4 pcs Green cardamom 8 pcs Black cardamom 3 pcs Black pepper 1 tsp Cumin seeds 1 tsp Bay leaves 4 pcs Cloves 20 -25 pcs Dry lemon 5 pcs Onion chopped 1 pc medium size Chopped garlic cloves 3 pcs Cardamom powder 1 tbsp Black pepper 1 tbsp Salt to taste Hot water 2 litters Basmati rice 4.5 cups (soaked before 30 min) Green chilies 5 pcs Pinch red food colour Roasted chicken put on the top rice and Heat off and steam the rice with smoked aroma of charcoal 5 minutes. Actually i was a big fan of Chicken Mandi Biryani which we get in our India then later i stopped eating it. Let me tell you the reason. when i went to Dubai 1st time Last year i went for a dinner to my friend Moahhamad Shaik Buran. Her mom Naziya Mummy ji prepared this recipe and i forgot what all types of Mandi Biryani i ate in our India. Believe me friends it was mind blowing taste and i ate almost 2 kgs of chicken and 1 kg of Mandi Rice. Oh My Godd.. Simplyy.. That day actually my return ticket was booked to india. but i cancelled it right away and postpone to 3 days later only because im a bigggg foodie and i want to learn that how actually they cook.. Ingredients: Mandi Spice Mix 1 ½ tbsp coriander 10-12 black pepper 1 tbsp cumin 4 cardamom 7 cloves 2 small cinnamon sticks 1 tsp salt ½ tsp turmeric ¼ tsp nutmeg Mandi Paste 2 tbsp mandi spice 1 tsp lime juice ½ tsp ginger powder ½ tsp red chili 2 tbsp cooking oil Chicken & Rice 3 chicken pieces 4 ½ cups water 2 tbsp cooking oil 2 tbsp butter 3 tbsp cashews 3 tbsp almonds 2 tbsp raisins 3 tbsp onion 1 tsp garlic ginger paste 1 tbsp mandi spice mix 1 tsp salt 2 cups-soaked basmati rice Instructions: 1. Prepare mandi spice mix by blending coriander, black peppercorn, cumin, cardamom, cloves, cinnamon sticks, salt, turmeric and nutmeg 2. Take a little bit of mandi spice mix and add lime juice, ginger powder, red chili and cooking oil 3. Marinate the chicken with the mandi paste 4. Steam the marinated chicken pieces for 30 minutes on medium heat 5. Check internal temperate 6. Fry the chicken for 2-3 minutes on each side 7. Using a large pot, add cooking oil, butter, cashews, almonds, raisins and stir 8. Strain out the nuts and raisins to use for later 9. Add sliced onions to the pot and fry until brown 10. Stir in mandi spice mix along with garlic ginger paste and salt 11. Pour reserved stock collected from steaming chicken the earlier 12. Bring to a bowl and add soaked rice and saffron water 13. Once the rice has been cooked, add the nuts, raisins and chicken pieces 14. Cover with lid and cook for 15 minutes on low heat 15. Add charcoal with ghee in a small steel bowl and cook the dish for 1 minute with lid on 16. Ready to Enjoy! Mandi is now popular among other Arab countries as well. Traditionally, the meat is slow cooked in a tandoor which makes the meat extremely tender and delicious and served over aromatic rice. Next grind them to a fine powder with Turmeric Powder & saffron Powder. Next marinating the chicken for which add in The Spice Mixture with Salt (as required) and rub it properly all over the chicken, then add Oil on top of the Chicken. Next Cooking the Rice for which first heat up the Oil in the Pan then add Onions, Salt and cook it till Onion turns into golden brown color then add Green Cardamom, Cloves, Cinnamon Stick & Golden Raisins mix it together, remove some brown Onions to use it for Garnishing later (Optional). Next add Rice (soaked & Washed), Water, Salt (as required) stir it properly and add in the spice mix into the rice. Next place the rack on top of the vessel then place the chicken on the rack, then transfer the entire thing into the Oven and cooking this at 180degree celsius for 30 minutes.
