Ở tập 8 này Thích Trải Nghiệm đưa tới một cách nấu khác đối với việc làm #steak đó chính là #Sousvide Cách nấu này có gì khác so với #panseard , sau khi nấu xong miếng steak ăn sẽ như thế nào? Sous-vide là cách nấu chậm giữ cho nhiệt độ luôn ổn định tuỳ theo từng món và từng loại nguyên liệu khác nhau. Ví dụ đối với việc nấu steak bò theo cách nấu #Sousvide, sau khi thịt bò được ướp xong, các bạn sẽ ép chân không hoặc túi zip lock cũng được, nhưng chú ý cố gắng ép hết khí ra ngoài để khi bỏ vào nồi nấu #Sousvide nước và mặt thịt được tiếp xúc tốt với nhau mà không có quá nhiều lỗ hở giúp thịt chín đều. Do mình nấu miếng Steak này ở mức độ chín là #MediumRare nên mình set máy ở nhiệt độ là 55 độ C và nấu trong vòng 2 tiếng. Sau khi lấy ra mình thấm khô nước trên mặt thịt và sear trên mặt chảo trong khoảng 45 giây - 1 phút hoặc dùng bếp khò để khò mặt thịt tạo 1 lớp cháy xém thơm và đẹp mắt trên mặt thịt. Mỗi cách làm có những ưu và nhược điểm riêng, hi vọng clip này sẽ mang lại cho bạn sự lựa chọn phù hợp cho cách nấu steak của mình. Med det här sättet behöver du inte vara utbildad kock som jag för att få riktigt saftig "kotte" med helt jämn stekgrad. Visst är det fantastiskt? Det finns många olika uppfattningar om temperatur, jag gillar entrecote bäst vid 56°, då jag upplever att den är saftig samtidigt som det insprängda fettet smälter ner. Kyl ner köttbiten riktigt ordentligt. Ta fram din brännare också. Värm sen upp en stekpanna eller stekbord till riktigt hög värme. 2. Pensla köttbiten med rapsolja. Stek alla sidor så det får en stekyta, använd både värmen från stekpanna/stekbord och brännare. 3. Ta köttet från värmen och krydda med vitlökspulver och MSG. 4. Lägg kött i påse som tål minst 56°. 5. Fyll upp vatten i din sous vide-behållare och värm upp din sous vide-stav/apparat till 56°. 6. Låt påsen med köttet gå i badet 60 min per 2,5 cm tjocklek. 7. Ta upp påsen ur badet, spara köttsafterna (dumt att slänga fantastiskt god smak). Torka av köttet. 8. Ta fram brännare och värm stekpanna/stekbord till hög värme. Stek till önskad stekyta. 9. Till servering skär du upp köttet och saltar.
