Full written recipe for Dum Aloo Prep time: 10-15 minutes Cooking time: 35-40 minutes Serves: 4-5 people Ingredients: POTATO | आलू 500 GRAMS (SMALL & ROUND) WATER | पानी AS REQUIRED SALT | नमक A PINCH MUSTARD OIL | सरसों का तेल AS REQUIRED BLACK CARDAMOM | बड़ी इलायची 2 NOS. GREEN CARDAMOM | हरी इलायची 4 NOS. CINNAMON | दालचीनी 2 INCH. CUMIN SEEDS | जीरा 1/2 TSP BAY LEAF | तेज पत्ता 2 NOS. CLOVES | लौंग 4-5 NOS. KASHMIRI RED CHILLI POWDER | कश्मीरी लाल मिर्च पाउडर 3 TBSP HOT WATER | गरम पानी AS REQUIRED ASAFOETIDA | हींग 1 TSP FENNEL SEED POWDER | सौंफ का पाउडर 2 TBSP GINGER POWDER | सौंठ का पाउडर 1 TSP SALT | नमक TO TASTE HOT WATER | गरम पानी AS REQUIRED Method: Add the potatoes in a pressure cooker followed by plenty of water & a pinch of salt, pressure cook the potatoes over high flame for 1 whistle only then switch off the flame & let the cooker de-pressurize naturally. Further take the potatoes out from the cooker & peel them once cooled, then poke holes into the potatoes using a fork or a toothpick, this will help them to fry properly. To fry the potatoes set a kadhai over the flame & add ample amount of mustard oil in it, the oil should be enough to partially cover the potatoes when you add them. Switch on the flame to high & heat the oil until it reaches its smoking point then lower the flame & allow the oil to cool down slightly. Further add the potatoes & fry them without stirring initially so that they start turning slightly golden from the bottom, then stir & fry them over medium high flame until they turn golden & crispy from all sides. Once fried, transfer the potatoes into a sieve & let them cool down, poke the potatoes again using a toothpick or a fork, this will help the spices & gravy to seep into the potatoes so that they become flavorful from the inside, your fried potatoes for dum aloo are ready. In a mortar add the black cardamom, green cardamom & cinnamon stick & pound them very slightly so that the cardamom pods break open & the cinnamon stick breaks. Further take some oil out from the kadhai to make the gravy & heat the oil in the kadhai. Add the cumin seeds, bay leaf, cloves & the crushed spices, mix the kashmiri red chilli powder & hot water in a separate bowl & add the paste, stir well & cook the spices & the kashmiri red chilli powder for 1-2 minutes over low flame. Further add asafoetida, fennel seed powder & ginger powder, stir well & cook for 3 minutes over medium flame. Then add the fried potatoes along with salt to taste & stir well, make sure you turn the flame to medium high at this stage & cook the potatoes for 3-4 minutes. Add hot water only till the surface of the potatoes & bring it to a boil. Once the gravy comes to a boil, cover the kadhai with a lid & place some weight on the lid, you can also use foil paper to cover the kadhai for dum cooking. Cook the dum aloo over low flame for 20-25 minutes. Once cooked take off the lid, you’ll see that the gravy has reduced, authentic dum aloo’s gravy is thick but you can adjust the consistency as per your preference, taste & adjust seasoning accordingly. Deep- fry the potatoes in mustard oil only till its 70% cooked. For the curry, heat mustard oil in a pan. Add yogurt in a bowl, mix in fennel powder and dried ginger powder. Mix well. Set aside till in use. In another bowl, add water and mix in Kashmiri red chilli powder and set aside till in use. Add black cardamom, cloves and caraway seeds, saute till fragrant. Add hing and mix well. Add the water and Kashmiri red chilli powder to the pan, stir in and cook for 2-3 minutes. Add in turmeric powder and mix well, cook for 2-3 minutes. Add in the yogurt mixture on a low flame while stirring continuously. Add the potatoes to the hot mustard oil again. Add salt to the curry, drain the potatoes from the oil and add directly to the curry. Mix everything well and cook for 4-5 minutes. Dum Aloo Kashmiri Dum Aloo is a mildly spiced whole baby potatoes curry cooked in a healthy and cooling yogurt base. It is extremely flavorful and is surely a different gravy when compared to the usual onion and tomato gravy. Serve it hot with phulka, naan or any rice of your choice. Prep time: 30 mins Cook time: 30 mins Number of servings: 4-5 persons Ingredients Baby potatoes 1 kg Fennel 1 tsp Cumin 1 1/2 tsp Cloves 4 Pepper 1/2 tsp Cinnamon 1 piece Cardamom 4 Coriander seeds 1 tbsp Mace 1 piece Curd 400 gms Red Chilies 15 Red chili powder 1 tsp Dry ginger powder 1/2 tsp Kasuri Methi Oil Salt Method 1. Boil potatoes with some salt and peel the potatoes and prick it with a toothpick 2. Take them in a bowl and add salt and red chili powder and rub it well 3. Fry the potatoes till they turn into golden brown color, keep them aside 4. Dry roast the whole spices 5. Let the ingredients cool down and grind it to a fine powder 6. De-seed red chilies and soak them in hot water 7. Grind them to a fine paste 8. Whisk curd along with the ground masala powder and dry ginger powder 9.Heat some oil and add red chili powder, turmeric powder and asafoetida and stir well 10.Add the whisked curd mixture and bring it to a boil 11.Add fried potatoes and close cook until potatoes are tender 12.Finally add kasuri methi and turn off the stove 13. Take medium sized boiled potatoes, peel the potatoes, Prick these so that they absorb spices well. 2. Add spices such as turmeric powder, red chili powder, salt. Mix all. 3. Heat oil in a pan, then add the potatoes. Fry well until it is brown from all sides, Stir at regular intervals. Take out. 4. Add oil in a pan, add cumin seeds.Reduce flame to prevent from browning. Add cinnamon stick, cloves and pepper. Peel and add Black cardamom. Roast them. 5. Add asafoetida, turmeric powder, coriander powder, crush and add dry fenugreek leaves. Slightly roast them. Add tomato cashew paste, add kashmiri red chili powder. 6. Stir and roast the masala till it is grainy and till oil separates, turn off flame. 7. Add water to it. Add garam masala, salt and some green coriander. Mix well then add the potatoes. Stir them. Cover and cook it on low flame for 4 to 5 minutes. Serving: 8. Sumptuous Dum Aloo is ready, garnish with some green coriander. It can be served with chapati , parantha, naan or rice. Kashmiri Dum Aloo is one of the most widely preferred north Indian curries that is prepared with lots of spices and deep fried potatoes. Ingredients: 500 g boiled baby potatoes 3 medium size tomatoes paste 2 onion +15 cashews nut paste 2 tbsp malai or fresh cream 4 tbsp fresh yogurt 1+1 tsp ginger garlic paste 1 tbsp coriander seeds 1 tsp cumin seeds 2 green cardamom 1/4 tsp fennel seeds 4 cloves 1 small cinnamon stick 10-12 pepper corn 1/2 tsp cumin seeds 1/4 tsp asafoetida 1 bay leaf 1 tsp salt 1/2 tsp turmeric powder 1 tsp kashmiri lal mirch 2-3 tsp green coriander leaf oil for frying Heat a pan and roast all special whole spices i.e listed for dum aloo. Keep it aside and let it cool, once it gets cool grind it into a bender and make powder. Now Coat the boiled potatoes with some red chili powder, salt and turmeric powder. Heat a deep pan and add oil for frying the potatoes, fry them till they become nice golden in color. Heat another pan add 4-5 tbsp oil, once its heats up add cumin seeds, bay leaf and asafoetida. Saute it for few seconds till the flavor releases. Add onion and cashew paste, fry it till it turn pink in color. Add ginger garlic paste , saute it till raw smell vanishes, Add red chili powder, cumin powder and salt and a little water, fry it for 3-4 min. Add tomato paste and fry it till water gets dry. add yogurt , simmer the flame and mix well, add cream mix well, add kasuri methi and fried potatoes. mix with gentle hands, add special roasted and powdered masala, give it a mix. Add 1 cup of water, you can keep the consistency as per your choice. Bring a boil, cover it with a lid, simmer the flame and cook for 7-8 min. garnish it with green coriander leaves. Serve it with roti, chapati, paratha or puri. Add baby potatoes and saute it well. Add Coriander powder, turmeric powder, degi red chilli powder and saute it well. Add a little water and saute until the masala become thick. Add tomato puree, salt to taste and mix it well on medium flame. Cover it with a lid and cook until the potatoes are cooked well. Add coriander leaves and mix it well. Put the potato pieces in water and then take out the Potatoes in a bowl, put some Orange Food Colour by adding water in it and then wash the Potatoes again and fry them on medium flame. For the filling, take some grated Mawa, Green Chilies, chopped Mint Leaves, Black Pepper Powder, Cardamom Powder, Salt, Powdered Sugar and Chat Masala. Mix them all and fill it in the Potatoes and keep it aside. Then take some Curd in a bowl, put Kashmiri Red Chili Powder, Coriander Powder, Turmeric Powder, Black Salt, Red Chili Powder, grinded Fennel Seeds, Dried Fenugreek Leaves, Ginger Powder, Black Pepper Powder and mix it well. Put some Ghee in a Pressure Cooker, then put Cumin Seeds, Cardamom, Cloves, Cinnamon Stick, Asafoetida, Green Chilies and grated Ginger. After cooking them for a while, turn the flame slow and put Turmeric Powder, Kashmiri Red Chili Powder and the Curd mixture in it. Put some Water, Mawa, Coriander Powder, Salt and Sugar in the gravy. When the gravy gets cooked and releases Oil, put some more water and then put the filled Potatoes in it and give it a whistle. Then turn off the flame and let the pressure to be released. After the pressure gets released, check it and then garnish it with some Coriander Leaves and grated Cottage Cheese. In this way, Kashmiri Dum Aloo recipe will be ready to serve. It goes amzingly with Rice How to Cook Rice: 🤍 Aloo Parartha Recipe: 🤍 Ingredients for Fried Potatoes: (Serves 2) - 1/2 kg Baby Potatoes(boiled) - Mustard Oil - 1 tsp Kashmiri Red Chilli Powder - 1 tsp Salt - 2 tsp Kashmiri Red Chilli Powder Ingredients for Chilli-Asafoetida Paste: - 2 tsp Kashmiri Red Chilli Powder - 1/4 tsp Kabuli Asafoetida - Water Ingredients for Yogurt-Mix: - 1 cup Yogurt - 2 tsp Chickpea Flour - 3 tsp Ginger Powder - 2 tsp Fennel Powder(roasted) - 3/4 cup Water Ingredients for Gravy: - 3 tbsp Mustard Oil - 2 Kashmiri Red Chillies - 2 Cinnamon Sticks - 1 tsp Black Cumin Seed - 4-5 Cloves - 3 Black Cardamom - 4 Green Cardamom - Chilli-Asafoetida Paste - Salt Method: 1. Make holes in the baby potatoes and keep it aside in a bowl 2. Now, in a pan heat mustard oil 3. Add red chilli powder, salt over baby potatoes and toss it together 4. Now, add these potatoes into the hot mustard oil and fry them 5. Take them out once shallow fried, and then, make hole in them again 6. Now, in a small bowl take kashmiri red chilli powder, kabuli asafoetida, water and mix it 7. Take yogurt, and add chickpea flour,ginger powder, roasted fennel powder, water 8. Mix it well and heat a pan over a low flame 9. Add 3 tbsp of Mustard Oil to it and let it heat 10. Now, add kashmiri red chillies, cinnamon sticks, black cumin seed, cloves and mix it 11. Crush black cardamom, green cardamom and add it to the pan 12. Now, add chilli-asafoetida paste to the pan along with whole dried kashmiri red chilli paste which has been soaking in hot water 13. Mix this spice mixture for about few minutes and add yougrt-mix to the pan 14. Now, add fried potatoes to the pan 15. Mix it; cover it with its lid and let it cook over a low flame, till the gracy thickens 16. Once cooked, turn off the flame; add salt and mix it 17.
